  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese, divided
  • 1/4 cup whole milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • Salt, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large skillet over medium heat, cook the bacon until crispy (about 8-10 minutes). Transfer to a paper towel-lined plate and chop into bite-sized pieces.
  3. Pat the chicken breasts dry. If thick, slice horizontally to about 1/2 inch thick. Season both sides lightly with salt and pepper.
  4. In a medium bowl, beat together the softened cream cheese, ranch seasoning, milk, garlic powder, and onion powder until smooth. Fold in half the chopped bacon, 1 cup cheddar, and 1/2 cup Monterey Jack cheese.
  5. Arrange the chicken breasts in a single layer in the prepared baking dish. Spoon the ranch cheese mixture evenly over the chicken, spreading to cover each piece.
  6. Sprinkle the remaining cheddar and Monterey Jack cheeses over the top, then scatter the rest of the chopped bacon.
  7. Bake uncovered for 25-30 minutes, or until the cheese is bubbly and the chicken reaches an internal temperature of 165°F (74°C). If the cheese browns too quickly, tent loosely with foil.
  8. Let the bake rest for 5 minutes before serving. Sprinkle with fresh parsley if desired.

For best results, use freshly shredded cheese for smoother melting. Let cream cheese fully soften before mixing. You can assemble the dish ahead and refrigerate up to 24 hours before baking (add 10 minutes to bake time if cold). Use an instant-read thermometer to avoid overcooking the chicken.
