  • 2 pounds boneless, skinless chicken breasts (or thighs)
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese (plus extra for garnish)
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 3 cups fresh baby spinach
  • 4 garlic cloves, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 pounds Yukon Gold potatoes, peeled and chopped
  • 4 tablespoons unsalted butter
  • 1/2 cup milk (whole or 2%)
  • 1/3 cup grated Parmesan cheese
  • 23 garlic cloves, minced
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Pat chicken dry and season both sides with salt, pepper, and smoked paprika.
  2. In a bowl, whisk together heavy cream, chicken broth, cream cheese, minced garlic, Italian seasoning, and half the Parmesan until mostly smooth.
  3. Place seasoned chicken in the bottom of a 6-quart slow cooker. Scatter sun-dried tomatoes on top, then pour the sauce mixture over everything.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours, until chicken is fork-tender.
  5. With about 1 hour left, peel and chop potatoes. Place in a large pot, cover with cold water and a pinch of salt. Bring to a boil, reduce to simmer, and cook until fork-tender (15–18 minutes).
  6. Once chicken is cooked, add spinach to the slow cooker, stir gently, and cover for 10–15 minutes until wilted. Adjust salt and pepper to taste.
  7. Drain potatoes and return to pot. Add butter, minced garlic, milk, remaining Parmesan, salt, and pepper. Mash until creamy and smooth, adding more milk if needed.
  8. To serve, spoon garlic parm mash onto plates, top with creamy Tuscan chicken and sauce. Garnish with extra Parmesan and parsley if desired.

Notes

For a thicker sauce, remove chicken and cook sauce uncovered on HIGH for 10–15 minutes or stir in a cornstarch slurry. Use chicken thighs for extra juiciness. Mash potatoes just until smooth to avoid gluey texture. The recipe is naturally gluten-free; check broth and cheese labels if needed. Leftovers keep well and flavors deepen overnight.
