This easy ranch chicken creamy crockpot recipe is the ultimate comfort food dinner, featuring tender chicken breasts slow-cooked in a creamy ranch and cheese sauce. It’s a set-and-forget meal that’s perfect for busy weeknights or cozy family gatherings.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 packet (1 oz) ranch seasoning mix
  • 8 oz cream cheese, softened
  • 3/4 cup chicken broth
  • 1 cup shredded cheddar cheese, plus extra for topping
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Chopped fresh parsley (for garnish, optional)
  • Cooked bacon bits (optional, for topping)

Instructions

  1. Lay the chicken breasts in the bottom of your slow cooker.
  2. In a medium bowl, combine softened cream cheese, ranch seasoning mix, chicken broth, shredded cheddar, garlic powder, onion powder, and black pepper. Whisk until mostly smooth.
  3. Pour the creamy mixture evenly over the chicken and spread to cover.
  4. Cover and cook on LOW for 5-6 hours or HIGH for 2.5-3 hours, until the chicken is tender.
  5. Remove the chicken and shred with two forks, then return it to the sauce in the crockpot.
  6. Stir everything together, top with extra cheddar and bacon bits if using, and cover for 5-10 minutes until the cheese melts.
  7. Garnish with chopped parsley and serve hot over rice, potatoes, or with bread.

Notes

For a lower fat version, use Neufchâtel cheese or reduced-fat cheese. You can substitute chicken thighs for a richer flavor. Add veggies like spinach or peas in the last hour of cooking. If the sauce is too thin, cook uncovered on HIGH for 20 minutes; if too thick, add a splash of milk or broth. Leftovers are great for stuffing baked potatoes or making sandwiches.
