  • 1 tablespoon olive oil (for searing, optional)
  • 3 garlic cloves, minced (or 1 tablespoon pre-minced garlic)
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half for lighter version; coconut cream for dairy-free)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained, and patted dry)
  • 1 teaspoon dried Italian seasoning (or a mix of dried basil, oregano, and thyme)
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • Fresh basil or parsley leaves, chopped (for garnish, optional)
  • Extra Parmesan cheese, for serving (optional)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides with salt and pepper.
  2. Optional: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 2-3 minutes per side until lightly golden.
  3. Place chicken breasts in the bottom of the slow cooker.
  4. In a medium bowl (or directly in the crockpot), combine chicken broth, heavy cream, Parmesan, sun-dried tomatoes, Italian seasoning, red pepper flakes, and minced garlic. Stir until well combined.
  5. Pour the sauce over the chicken in the crockpot.
  6. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken is cooked through (internal temp 165°F).
  7. Optional: For a creamier sauce, use an immersion blender to blend some of the sauce (avoiding the chicken) until smooth.
  8. Taste and adjust seasoning if needed.
  9. Serve chicken with plenty of sauce over pasta, rice, or mashed potatoes. Garnish with extra Parmesan and fresh basil or parsley.

Notes

For ultra-tender chicken, you can use boneless thighs instead of breasts. Searing the chicken before slow cooking adds extra flavor but is optional. If the sauce is too thin, remove the lid for the last 30 minutes of cooking. For a dairy-free version, use coconut cream and nutritional yeast instead of Parmesan. Always taste and adjust the sauce before serving, as sun-dried tomatoes and Parmesan can vary in saltiness.
