Juicy, tender chicken bites baked in a rich garlic butter sauce—this easy recipe is perfect for busy weeknights and guaranteed to please the whole family. Ready in under 30 minutes with simple, everyday ingredients.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (sweet or smoked)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 4 tablespoons unsalted butter, melted
  • 45 large garlic cloves, minced
  • Fresh parsley, chopped (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut chicken breast into 1-inch pieces, trimming any excess fat or tendons.
  3. In a mixing bowl, toss chicken pieces with garlic powder, paprika, Italian seasoning, salt, and black pepper until evenly coated.
  4. Spread seasoned chicken in a single layer in a large baking dish or sheet pan. Do not overcrowd.
  5. Melt butter in a small bowl and stir in minced garlic.
  6. Drizzle garlic butter evenly over the chicken bites. Toss gently to coat all pieces.
  7. Bake for 16-20 minutes, stirring once halfway, until chicken is cooked through and just starting to brown at the edges (internal temp should reach 165°F).
  8. Optional: Broil for 2-3 minutes for extra color, watching closely to avoid burning the garlic.
  9. Garnish with fresh parsley and a squeeze of lemon juice if desired. Serve hot.

Notes

For extra flavor, marinate the chicken in the garlic butter for 30 minutes before baking. Use boneless thighs for even juicier bites. Don’t overcrowd the pan—use two pans if doubling the recipe. Rest chicken for 2-3 minutes before serving for maximum juiciness. Easily made dairy-free with olive oil or plant-based butter.
