  • 1/2 cup low-sodium chicken broth
  • 4 ounces cream cheese, softened
  • 3/4 cup freshly grated parmesan cheese
  • 5 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons unsalted butter
  • Chopped fresh parsley or basil, for garnish (optional)

Instructions

  1. Pat chicken thighs dry with paper towels and season both sides with salt and pepper.
  2. Arrange chicken thighs in a single layer at the bottom of the crockpot.
  3. In a medium bowl, whisk together heavy cream, chicken broth, softened cream cheese, grated parmesan, minced garlic, Italian seasoning, onion powder, and red pepper flakes (if using) until mostly smooth.
  4. Pour the sauce evenly over the chicken in the crockpot, ensuring all pieces are coated.
  5. Cover and cook on low for 5-6 hours or high for 2.5-3 hours, until chicken is cooked through and tender (internal temperature should reach 165°F).
  6. Stir in unsalted butter until melted and the sauce is silky. Taste and adjust seasoning as needed.
