  • 2 tablespoons unsalted butter, melted
  • 6 cups (1.4 L) water (for baking soda bath)
  • 1/4 cup (60 g) baking soda
  • 1/2 cup (100 g) granulated sugar (for coating)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons (55 g) unsalted butter, melted (for brushing)

Instructions

  1. In a large mixing bowl, whisk together flour, salt, sugar, and instant yeast. Pour in warm water and 2 tablespoons melted butter. Stir until a shaggy dough forms (about 2-3 minutes).
  2. Knead the dough: If using a stand mixer, knead on medium for 5 minutes. By hand, knead on a lightly floured surface until smooth and elastic, about 7 minutes. Dough should be slightly tacky but not sticky.
  3. Place dough in a greased bowl, cover, and let rise in a warm place for 30 minutes or until doubled in size.
  4. Punch down the dough and turn onto a floured surface. Roll into a long rope about 3/4-inch thick. Cut into 1-inch pieces. Arrange pieces in a honeycomb pattern on a parchment-lined baking sheet.
  5. Preheat oven to 425°F (220°C). In a large pot, bring 6 cups water and 1/4 cup baking soda to a gentle boil.
  6. Working in batches, drop pretzel bites into the baking soda bath for 30 seconds. Remove with a slotted spoon and return to baking sheet.
  7. Brush bites with melted butter. Bake in the preheated oven for 12-15 minutes, or until golden brown and crisp. Rotate the sheet halfway through baking.
  8. While bites are still warm, brush with remaining melted butter. Toss gently in a bowl with 1/2 cup sugar and 2 teaspoons cinnamon until well coated.
  9. Transfer coated bites to a wire rack to cool for 10 minutes before serving.
