  • 1 cup mozzarella cheese, shredded (120g)
  • 1/2 cup cheddar cheese, shredded (60g)
  • 15 slices pepperoni (about 50g, optional or substitute veggies)
  • 1/2 cup pizza sauce (120ml)
  • 1 teaspoon Italian seasoning
  • Red pepper flakes (optional, for topping)
  • Grated Parmesan cheese (optional, for topping)
  • Optional fillings: cooked mushrooms, bell peppers, olives (chopped), cooked sausage

Instructions

  1. In a large mixing bowl, whisk together flour, instant yeast, sugar, and salt.
  2. Add warm water and olive oil to the dry ingredients. Stir until a sticky dough forms (about 2 minutes).
  3. Knead the dough in the bowl or on a floured surface until smooth and elastic, about 5-7 minutes. Add a splash of water if too dry or a sprinkle of flour if too wet.
  4. Cover the dough with a kitchen towel or plastic wrap and let rise in a warm spot for 20 minutes.
  5. While the dough rises, melt butter and stir in minced garlic, parsley, and a pinch of salt. Set aside.
  6. Preheat oven to 375°F (190°C). Line a baking sheet or dish with parchment paper.
  7. On a lightly floured surface, roll the dough into a 12×8-inch rectangle.
  8. Brush the rolled-out dough with half the garlic butter.
  9. Spread pizza sauce evenly across the dough, leaving a 1/2-inch border.
  10. Scatter mozzarella and cheddar cheese evenly. Layer pepperoni slices and sprinkle with Italian seasoning.
  11. Starting from the long edge, roll the dough tightly into a log. Pinch the seam to seal.
  12. Slice into 10-12 even rolls using a sharp knife or pizza cutter.
  13. Arrange rolls, cut side up, in the baking dish with space between each.
  14. Brush tops with remaining garlic butter. Sprinkle with Parmesan or red pepper flakes if desired.
  15. Bake for 18-22 minutes, until golden and cheese is bubbling. Tent with foil if browning too quickly.
  16. Let rolls cool for 5 minutes before serving. Serve warm with extra pizza sauce for dipping.

For best results, use fresh garlic in the butter and let the dough rise for at least 20 minutes (40 for extra fluffiness). Store-bought dough works in a pinch.
