Ingredients

Scale
  • 2 large yellow onions, peeled and sliced into thin rings (about 1/8-inch thick)
  • 1 cup buttermilk (or milk with a dash of lemon juice)
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1 cup panko breadcrumbs (or gluten-free panko)
  • 2 tablespoons ranch seasoning mix
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon black pepper (plus more to taste)
  • Olive oil spray
  • For the Creamy Herb Dip:
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon dill, chopped (or 1 teaspoon dried dill)
  • 1/4 teaspoon garlic powder
  • Kosher salt & black pepper, to taste

Instructions

  1. Peel and slice the onions into thin rings, about 1/8-inch thick. Separate the rings gently.
  2. Place onion rings in a mixing bowl and pour buttermilk over them. Soak for at least 15 minutes (up to 30 minutes for extra tenderness).
  3. In one shallow plate, mix together flour, smoked paprika, garlic powder, salt, and pepper. In a second plate, combine panko breadcrumbs and ranch seasoning.
  4. Working in batches, remove onion rings from buttermilk, letting excess drip off. Dredge each ring in the seasoned flour, dip back into the buttermilk, then coat in the panko-ranch mix. Press gently for good coverage.
  5. Preheat the air fryer to 375°F for 3 minutes. Lightly spray the basket with olive oil spray.
  6. Arrange coated onion rings in a single layer in the air fryer basket. Lightly mist with olive oil spray.
  7. Air fry at 375°F for 10-12 minutes, flipping halfway and spraying again if needed. Chips are done when golden brown and crisp. Start checking at 9 minutes.
  8. Repeat with remaining batches, keeping finished chips on a wire rack so they stay crisp.
  9. For the creamy herb dip: In a bowl, combine Greek yogurt, mayonnaise, lemon juice, chives, parsley, dill, garlic powder, salt, and pepper. Stir until smooth. Taste and adjust seasoning.
  10. Serve onion ring chips warm with creamy herb dip on the side.

Notes

Slice onions as thin as possible for maximum crunch. Don’t overcrowd the air fryer basket—cook in batches for best results. For gluten-free, use certified gluten-free flour and panko. The chips are best served fresh but can be re-crisped in the air fryer. The creamy herb dip can be made ahead and stored in the fridge for up to 4 days.
